plus d\u00e9cisives pour le succ\u00e8s du processus.<br data-start=\"740\" data-end=\"743\">Il ne s&rsquo;agit pas d&rsquo;une valeur accessoire, mais d&rsquo;un param\u00e8tre technique central, dont d\u00e9pendent la <strong data-start=\"839\" data-end=\"867\">stabilit\u00e9 microbiologique<\/strong>, la <strong data-start=\"872\" data-end=\"899\">r\u00e9gularit\u00e9 de la p\u00e9riodes de stress climatique comme l&rsquo;\u00e9t\u00e9, o\u00f9 les temp\u00e9ratures ambiantes d\u00e9passent largement les 30\u00b0C, le <strong data-start=\"1067\" data-end=\"1123\">maintien de conditions thermiques contr\u00f4l\u00e9es et constantes<\/strong> devient non seulement complexe, mais essentiel pour assurer la continuit\u00e9 de la production et la
